1½ cups Sorghum Blend1 cup sugar½ cup unsweetened cocoa powder (not Dutch process or alkali)1 teaspoon xanthan gum¾ teaspoon baking soda¾ teaspoon saltPinch ground cloves (optional)1 cup buttermilk, well-shaken, (thinned with ¼ cup water if thick) or homemade Buttermilk1 tablespoon pure vanilla extract½ cup unsalted butter or buttery spread, such asEarth Balance, at room temperature, or 1/3 cup canola oil1 cup sugar2 large eggs, at room temperature
FILLING1 package (8 ounces) cream cheese or cream cheese alternative, such as Tofutti, at room temperature2 cups Whipped Cream or whipped topping
FROSTING1 cup powdered sugar¼ cup unsweetened cocoa powder1 tablespoon unsalted butter or buttery spread, such as Earth Balance, at room temperature1 tablespoon water (or more if needed)
DIRECTIONS :
1. Place a rack in the middle of the oven. Preheat the oven to 325°F. Generously grease two 8-inch round nonstick (gray, not black) cake pans. Line the bottoms with parchment paper or wax paper, then grease again; set aside.
2. Make the cake: In a medium bowl, whisk together the sorghum blend, sugar, cocoa, xanthan gum, baking soda, salt, and cloves; set aside. In a measuring cup, combine the buttermilk and vanilla extract; set aside.
3. In a large mixing bowl, beat the butter with an electric mixer on medium speed until it is smooth and creamy. Add the sugar and beat 1 minute, scraping down the side of the bowl with a spatula. Add the eggs, one at a time, beating thoroughly after each addition.
4. With the mixer on low speed, add the sorghum mixture alternately with the buttermilk, beginning and ending with the sorghum mixture. Be sure to beat the dry ingredients thoroughly each time before adding the buttermilk. Spread the batter evenly in the pans.
5. Bake 25 to 30 minutes; or until a toothpick inserted into the center of the cakes comes out clean. Cool the cakes in the pans 10 minutes on a wire rack. Remove the cakes from the pans with a thin metal spatula, discard the paper, and cool completely on the wire rack.
6. Make the filling: In a medium bowl, beat the cream cheese on low speed until smooth. Gently fold the whipped cream into the cream cheese; set aside.
7. Make the frosting: In a small bowl, whisk together the powdered sugar and cocoa. Stir in the butter and water until the glaze is smooth, adding more water if necessary 1 teaspoon at a time to reach spreading consistency.
8. To assemble the cake, place one layer on a serving plate, topside down. Spread evenly with all of the filling. Place remaining cake layer on top, topside up, and spread with the glaze. Serve immediately and refrigerate the leftovers.

The baked New York style cheesecake recipe, on its surface, looks like one of the more simple dessert recipes. It’s a fairly simple set of ingredients, and the mixing and baking is fairly straightforward.

So why does it so often go wrong? Well, part of the problem is in the name: cheesecake. Right there, you expect it to act like a cake in the baking process. The problem is, it’s not really a cake at all. If you were to take a hundred cooking school graduates who had never heard of cheesecake and present each of them with a slice of baked New York style cheesecake, all of them would most likely identify it as a pie… or at best a custard.

Let’s start with the crust. Cakes don’t normally have a crust other than what bakes up when they cook, right? Well, your cheesecake needs a crust or you’re going to have containment issues. This is not usually a traditional piecrust, but rather a blind baked mashed-together construction made of graham crackers, cookies or other baked goods.

Then there’s the composition of the cheesecake itself. The baked New York style cheesecake begins life as a very thick batter that bears a vague resemblance to traditional cake batter, except for the fact that it contains little or no flour depending on your recipe.

The baking is different, also. One of the secrets to New York style cheesecake success is a fairly moist baking environment, which means using a water bath. Have you ever seen a cake recipe that called for the pan to be placed in a larger pan with water in it?

So, for cheesecake success, you might want to stop thinking about it as a cake. Think of it as a pie-cake hybrid, or better yet as custard that needs some extra care in the preparation, but will yield sweet rewards when it’s done. The baked New York style cheesecake recipe is simple, but can be unforgiving if you don’t treat it right.

Lemon Poppy Seed Cookie Recipe

DIRECTIONS :
1. Whisk the flour, poppy seeds, and salt in a medium bowl; set aside.
2. Soften the butter in a large bowl with an electric mixer at medium speed, working the chunks just until they start to lose their shape and become a mass without turning gooey. Add both sugars and continue beating until creamy and lemony light, about 3 minutes. Beat in the egg yolk and the lemon extract until smooth.
3. Turn off the beaters, add the prepared flour mixture, and beat at low speed just until a smooth dough forms with no pockets of undissolved flour.
4. Lightly dust a clean, dry work surface with flour. Turn the dough out onto it, then divide in half. Roll each half under your palms into an 8 inch long log; wrap each log in plastic. Refrigerate for at least 4 hours (see right, “to store”).
5. Position the rack in the center of the oven and preheat the oven to 325°F. Unwrap a log and sliceit into as many 1⁄4-inch-thick disks as you desire. Lay these out, leaving 2-inch spaces in between, on a large ungreased baking sheet. Rewrap the unused portion of the log and return to the refrigerator.
6. Bake until lightly browned and fairly dry to the touch, about 22 minutes.
To cool:Keep the cookies on the baking sheet for 5 minutes, then transfer them to a cooling rack with a metal spatula. Cool the baking sheet for an additional 5 minutes before adding more disks, if desired.
To store: Keep the wrapped logs in the refrigerator for up to 2 weeks; store the baked cookies in a tightly sealed container for up to 2 days.

Seven layer jello salad for christmas recipes

My sister usually makes this for Christmas every year, I THINK. She usually makes it for my dad, as it’s diabetic friendly, but it’s a huge hit even with the people

who aren’t diabetic. I’m not sure if this is what it’s called. I’m looking for a christmas recipe for it. I know that you need to layer the jello and all that, but

what is the stuff that makes the white stuff around it? When my sister makes it, it’s usually cut up into a multi

colored… jello salad. We’re not on speaking terms at the moment, so I can’t ask her right now. After I layer it, do I just mush it up so it looks like that?
I hope that made sense, I’m really tired. What I meant is, the end result looks like cut up recipes/”>little squares of multi colored jello with a white ingredient surrounding it.
2 (3 oz.) boxes cherry Jello
2 (3 oz.) boxes orange Jello
2 (3 oz.) boxes lemon Jello
2 (3 oz.) boxes lime Jello
2 (3 oz.) boxes blackberry Jello
3 3/4 c. Carnation milk

This salad fits well in a 9 1/2 x 13 1/2 Tupperware cake tote. Grease bottom of Tupperware container with Pam. Start a day ahead making this salad as each layer must

set. Be sure pan is level in refrigerator so each layer sets evenly.
Step 1: Mix 1 box of cherry Jello with 3/4 cup hot water, then 3/4 cup of cold water. Let set.

Step 2: Mix 1 box of cherry Jello with 3/4 cup hot water, then instead of using cold water, use 3/4 cup Carnation milk. Let set.

Step 3:christmas Repeat Step 1 and Step 2 with the remaining four flavors. You will have 10 layers of Jello, but very thin as to reflect rainbow.

WHITE LAYER:

2 pkg. plain gelatin
1/2 c. cold water
2 c. sour cream
2 c. hot water
1 c. sugar
2 tsp. vanilla

4 different Jellos
